  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 3 cups (360g) powdered sugar, sifted
  • 2 tablespoons meringue powder
  • 45 tablespoons water, room temperature
  • ½ teaspoon vanilla extract (for icing)
  • Black gel food coloring
  • Orange gel food coloring (optional)
  • Toothpicks
  • Small piping bags or zip-top bags

Instructions

  1. Make the Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3 minutes). Add the egg, vanilla extract, and almond extract (if using). Beat until combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  3. Chill the Dough: Divide the dough into two discs, wrap each tightly in plastic wrap, and refrigerate for at least 1 hour (up to 3 days).
  4. Roll and Cut: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. On a lightly floured surface, roll one disc of dough to ¼-inch thickness. Use a round cookie cutter to cut out shapes. Place cookies 2 inches apart on prepared sheets.
  5. Bake for 8-10 minutes, or until edges are just barely golden. Cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  6. Prepare the Royal Icing: In a medium bowl, combine sifted powdered sugar and meringue powder. Add 4 tablespoons water and vanilla extract.   7. Divide icing into two bowls. Leave one bowl white (or add a tiny drop of orange coloring). Color the other bowl with black gel food coloring. Transfer each color to separate piping bags or zip-top bags with a tiny corner snipped off.
  8. Create the Spiderweb Design: Outline each cookie with white icing and let dry for 10 minutes. Fill in the center with white icing. While still wet, pipe a small dot of black icing in the center, then pipe concentric circles of black icing around it. Working quickly, drag a toothpick from the center outward through all circles. Wipe toothpick clean, then drag from outer edge toward center, slightly offset. Repeat to create 6-8 radiating lines.
  9. Let the Icing Set: Allow decorated cookies to sit at room temperature for at least 2 hours (or overnight) until icing is completely hard.
