  • Eggs, Oil, and Water (as specified on cake mix box)
  • Red Food Coloring Gel
  • 8 oz Full-fat Block Cream Cheese (e.g., Philadelphia), softened
  • 1/4 cup Unsalted Butter, softened
  • 1 cup Powdered Sugar (Confectioners’ Sugar)
  • 1 tsp Vanilla Extract
  • 12 oz White Chocolate Chips (e.g., Alfonsino or Ghirardelli)
  • 1 tbsp Coconut Oil or Vegetable Shortening
  • Red and White Holiday Sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Prepare cake mix according to package directions, adding extra red food coloring gel for vibrant color.
  2. Bake cake in a Bundt pan or round pans for the time specified on the box. Cool in pan for 10 minutes, then remove to a wire rack to cool completely.
  3. Crumble the completely cooled cake into fine crumbs using a food processor or by hand.
  4. In a mixing bowl, beat softened cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
  5. Gradually mix the frosting into the cake crumbs until the mixture resembles wet sand or playdough and holds together when squeezed.
  6. Roll the mixture into 1.5 tablespoon-sized balls and place on a parchment-lined baking sheet.
  7. Chill the cake balls in the freezer for 30 minutes or refrigerator for 2 hours until firm.
  8. Melt white chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  9. Dip the tip of a cake pop stick into melted chocolate and insert it into a chilled cake ball.
  10. Dip the entire ball into the melted chocolate, tapping off excess, and immediately add sprinkles.
  11. Place pops upright in a muffin tin lined with parchment and let set at room temperature for 20 minutes or in the fridge for 10 minutes.

Notes

Ensure cake is completely cool before crumbling to prevent melting the frosting. Chill cake balls thoroughly before dipping to prevent them from falling off the stick. Dip the tip of the stick in chocolate before inserting it into the cake ball to act as glue. Store in an airtight container at room temperature for up to 5 days.
