  • 1 cup reduced apple cider (from 2 cups original)

Instructions

  1. Pour 2 cups of apple cider into a saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the liquid reduces to 1 cup (approx. 20 minutes). Stir occasionally and let cool completely.
  2. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat the softened butter and granulated sugar on medium-high speed until light and fluffy (approx. 3 minutes).
  5. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  6. Add the dry ingredients to the butter mixture in three parts, alternating with the reduced apple cider in two parts. Begin and end with dry ingredients. Mix on low speed just until combined.
  7. Gently fold ¼ cup of the salted caramel sauce into the batter.
  8. Divide batter evenly between prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cakes cool in pans for 15 minutes, then turn out onto a wire rack to cool completely.
