  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces. Try to keep them uniform so they cook evenly.
  3. Make the filling: In a large mixing bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, lemon juice, and vanilla extract. Toss until apples are evenly coated.
  4. Transfer the filling to a 9×13-inch baking dish and spread in an even layer. Do not pack down.
  5. Make the buttery oat crumble: In a medium bowl, whisk together oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter, two forks, or your fingertips, cut the butter into the dry mixture until it resembles coarse meal with some pea-sized butter chunks remaining.
  6. Assemble the crisp: Sprinkle the crumble topping evenly over the apples. Do not press down.
  7. Place the dish on a baking sheet and bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil.
  8. Cool on a wire rack for at least 15-20 minutes before serving. Serve warm.
