  • ¾ cup (75g) Dutch-process cocoa powder

  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) buttermilk
  • ½ cup (115g) unsalted butter (for caramel)
  • 1 cup (200g) light brown sugar, packed (for caramel)
  • ½ cup (120ml) heavy cream, warmed (for caramel)
  • 1 to 1 ½ teaspoons salt (for caramel)
  • 1 cup (240ml) heavy cream, cold (for frosting)
  • 8 ounces (225g) dark chocolate chips (for frosting)
  • 2 tablespoons butter, softened (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch or 9-inch round cake pans and line bottoms with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until uniform.
  3. In a separate large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition, then add vanilla extract. Scrape down the bowl.
  5. Add half of the dry ingredients to the butter mixture and mix on low until combined. Pour in buttermilk and mix until combined. Add remaining dry ingredients and mix until smooth. Do not overmix.
  6. Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cakes cool in pans for 10 minutes, then turn out onto a cooling rack to cool completely.
  8. While cakes cool, make the caramel: Melt ½ cup butter in a saucepan over medium heat. Add brown sugar and stir for 2 minutes. Add heavy cream and salt, bring to a gentle simmer, and cook for 3-4 minutes until thickened. Cool to room temperature.
  9. Make the frosting: Heat 1 cup heavy cream until simmering. Pour over dark chocolate chips, let sit for 2 minutes, then stir until smooth. Add 2 tablespoons butter and stir until incorporated. Cool until spreadable.
  10. Assemble: Place one cake layer on a plate, spread a thin layer of caramel, add second layer. Cover top and sides with chocolate ganache. Drizzle remaining caramel over the top.

Ensure all ingredients are at room temperature for best results. Do not open the oven door while baking. Let cakes cool completely before frosting to prevent melting. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use plant-based butter and oat milk.
