Ingredients

  • Whole milk ricotta cheese (about 1 cup)
  • Fresh figs (6-8 ripe figs, sliced)
  • Baguette or rustic bread, sliced into 1/4-inch rounds
  • Hot honey (honey infused with chili flakes or hot peppers), about 2 tablespoons
  • Extra-virgin olive oil, for brushing bread
  • Lemon zest (from 1 lemon)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh thyme or basil leaves (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into 1/4-inch (6 mm) thick rounds and arrange them in a single layer on a baking sheet.
  3. Brush each bread slice lightly with extra-virgin olive oil using a pastry brush.
  4. Toast the bread in the oven for 8-10 minutes, flipping halfway through, until edges are golden and crisp.
  5. While the bread toasts, place ricotta in a mixing bowl. Add a pinch of sea salt, freshly ground black pepper, and lemon zest.
  6. Whip the ricotta using a hand or stand mixer on medium speed until smooth, light, and fluffy, about 2-3 minutes.
  7. Slice fresh figs into thin wedges or quarters. If using dried figs, chop finely.
  8. Spread a generous dollop of whipped ricotta on each toasted bread slice.
  9. Top each with fig slices.
  10. Drizzle hot honey lightly over the figs and ricotta.
  11. Sprinkle a tiny pinch of sea salt and garnish with fresh thyme or basil leaves if desired.
  12. Serve immediately for best texture.

Notes

Use chilled ricotta for best whipping results. Toast bread just before serving to keep it crisp. If hot honey is unavailable, mix regular honey with a pinch of red pepper flakes. For dairy-free, use whipped cashew cream and gluten-free bread. Lemon zest brightens the ricotta and balances richness. Fresh herbs like thyme or basil add a nice herbal note.
