Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. In a mixing bowl, mash 3 ripe bananas until mostly smooth with some small chunks remaining.
  3. Add ½ cup melted unsalted butter to the mashed bananas and stir gently to combine.
  4. Mix in ¾ cup granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract until just combined.
  5. Sprinkle 1 ½ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, and optional ½ teaspoon cinnamon over the wet mixture. Fold gently until no streaks of flour remain.
  6. Fold in ½ cup chopped walnuts or chocolate chips if using.
  7. Pour the batter into the prepared loaf pan, smoothing the top gently.
  8. Bake for 55–65 minutes, starting to check at 55 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
