  • 1/2 cup chopped walnuts (60 grams), lightly toasted
  • 1/4 cup brown sugar (50 grams)
  • 2 tablespoons all-purpose flour (15 grams)
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed (45 grams)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and line it with parchment paper.
  2. Prepare the walnut streusel topping by combining chopped walnuts, brown sugar, flour, and cinnamon in a small bowl. Add cold cubed butter and blend with fingers or a pastry cutter until crumbly. Set aside.
  3. In a medium bowl, whisk together the flour, baking soda, and salt.
  4. In a large bowl, beat the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Fold in the mashed bananas and Greek yogurt until combined.
  7. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Do not overmix.
  8. Spoon the batter into the prepared loaf pan and smooth the top.
  9. Sprinkle the walnut streusel evenly over the batter without pressing it down.
  10. Bake on the middle rack for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if the streusel browns too quickly.
  11. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for best flavor and moistness. Toast walnuts lightly before adding to streusel for extra crunch. Avoid overmixing the batter to keep bread tender.
