A quick and easy zero-carb grilling recipe featuring ribeye or New York strip steak seared to perfection and topped with a flavorful garlic butter.

  • 810 oz ribeye or New York strip steak per serving
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil or avocado oil
  • 3 tablespoons unsalted butter
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 teaspoon lemon zest (optional)
  • Pinch of salt and pepper for garlic butter

Instructions

  1. Prepare the garlic butter: In a small bowl, combine softened unsalted butter with minced garlic, chopped parsley, lemon zest, pinch of salt, and pepper. Mix well and set aside or refrigerate.
  2. Bring the steak to room temperature for 10-15 minutes and pat dry with paper towels.
  3. Season the steak generously with kosher salt and freshly ground black pepper on both sides.
  4. Preheat a cast iron skillet or heavy-bottomed pan over medium-high heat until smoking slightly. Add olive or avocado oil and swirl to coat.
  5. Sear the steak for 3-4 minutes per side for medium-rare (130°F internal temperature), adjusting time for desired doneness.
  6. Remove steak from heat and place on a plate or cutting board. Spoon a generous dollop of garlic butter on top and let rest uncovered for 5 minutes.
  7. Slice against the grain if desired and serve with the melted garlic butter.

Notes

Do not crowd the pan when cooking multiple steaks; cook in batches. Use high heat for a good sear and pat the steak dry before cooking. Let the steak rest after cooking to redistribute juices. Use tongs to flip the steak to avoid piercing and losing juices. For a smoky aroma, add rosemary or thyme during searing but watch the butter to prevent burning.
