Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper. Let rest at room temperature for 10 minutes.
  2. Heat a cast iron skillet over medium-high heat and add 2 tablespoons olive oil. Heat until oil shimmers but does not smoke, about 2 minutes.
  3. Place pork chops in the skillet without overcrowding. Sear for about 4 minutes on the first side until a deep golden crust forms. Flip and sear the other side for 3-4 minutes. For thicker chops, lower heat and cover loosely for 2-3 minutes until internal temperature reaches 145°F (63°C).
  4. Transfer pork chops to a warm plate and tent loosely with foil to rest.
  5. Reduce heat to medium and add butter to the skillet. When melted, add minced garlic and chopped shallot. Stir for about 1 minute until fragrant, avoiding burning.
  6. Pour in 3/4 cup apple cider and 1/2 cup chicken broth. Scrape up browned bits from the pan with a wooden spoon.
  7. Stir in Dijon mustard and fresh thyme. Let sauce simmer gently for 5-7 minutes until slightly thickened and coats the back of a spoon. If desired, stir in 2 tablespoons heavy cream for creaminess.
  8. Return pork chops to the skillet and warm in the sauce for 1-2 minutes. Spoon sauce generously over chops before serving.
