  • 2 tablespoons tomato paste
  • 1/2 cup water or beef broth
  • 1 tablespoon olive oil or vegetable oil
  • Salt and pepper to taste

Instructions

  1. Finely chop one medium onion and mince two cloves of garlic. Drain and rinse one 15-ounce can of black or pinto beans. Set aside.
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Warm until shimmering but not smoking.
  3. Add the chopped onion to the skillet and cook for about 3 minutes until translucent and slightly golden. Add the minced garlic and cook for another 30 seconds, being careful not to burn it.
  4. Add 1 pound of ground beef to the skillet. Break it apart with a spatula and cook for 6-8 minutes until fully browned with no pink remaining. Drain excess fat if needed, leaving a bit for flavor.
  5. Sprinkle in 2 tablespoons of taco seasoning and stir well to coat the meat evenly. Add 2 tablespoons of tomato paste and stir to combine.
  6. Stir in the rinsed beans and pour in 1/2 cup of water or beef broth. Bring to a gentle simmer, then reduce heat to medium-low.
  7. Let the mixture simmer for 10 minutes, stirring occasionally, until the liquid reduces slightly and the beans soften, blending into a creamy texture.
  8. Season with salt and pepper to taste. Add cayenne or hot sauce if desired for extra heat.
  9. Serve warm in tortillas, over rice, or on salad bowls.
