  • 1 cup (240 ml) freshly squeezed lemon juice (about 46 lemons)
  • 1 cup (200 g) granulated sugar
  • 2 cups (480 ml) cold water
  • 3 envelopes (21 g) unflavored gelatin powder
  • 1 cup (150 g) fresh strawberries, hulled and chopped
  • 2 tablespoons (30 ml) water
  • 1 tablespoon (12 g) sugar (optional)
  • 1 cup (240 ml) vodka
  • Fresh mint leaves (optional garnish)
  • Thin lemon slices (optional garnish)

Instructions

  1. Prepare the Strawberry Puree: Combine the chopped strawberries, water, and sugar in a blender. Pulse until smooth but still slightly textured. Set aside in the fridge for about 10 minutes.
  2. Make the Lemonade Gelatin Base: In a medium saucepan, combine 1 cup (240 ml) cold water and sugar. Sprinkle the gelatin evenly over the surface and let it bloom for 5 minutes.
  3. Heat the mixture over low heat, stirring constantly, until the gelatin and sugar dissolve completely, about 3-5 minutes. Do not let it boil.
  4. Remove from heat and stir in the freshly squeezed lemon juice and remaining 1 cup (240 ml) cold water. Let cool slightly for 10 minutes until warm but not hot.
  5. Add the Vodka: Stir in the vodka gently to combine.
  6. Combine the Layers: Pour about half of the lemonade gelatin mixture into molds or cups, filling halfway. Refrigerate for 30 minutes or until slightly set but still tacky.
  7. Gently fold the chilled strawberry puree into the remaining lemonade gelatin mixture. Spoon or pour this mixture over the set base layer to create a marbled, layered look.
  8. Refrigerate for at least 4 hours or until fully set and firm to the touch but still jiggle slightly.
  9. Garnish and Serve: Just before serving, top with fresh mint leaves or a thin lemon slice. Pop them out of silicone molds or serve directly in cups.

Notes

Bloom gelatin properly by sprinkling over cold water and letting it sit for 5 minutes before heating. Heat gelatin mixture low and slow to avoid boiling. Let each layer set enough before adding the next to maintain distinct layers. Use fresh lemon juice for best flavor. Do not freeze to speed setting as it affects texture. If gelatin feels grainy, warm gently and stir again.
