  • 45 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the boneless skinless chicken thighs dry with paper towels. Season both sides generously with salt and freshly ground black pepper.
  2. Place a large skillet over medium-high heat and add the olive oil. Heat until the oil shimmers but does not smoke.
  3. Lay the chicken thighs in the pan in a single layer without overcrowding. Cook undisturbed for 5-6 minutes until the underside is golden brown and crispy. Flip and cook the other side for another 5 minutes until the internal temperature reaches 165°F (74°C).
  4. Reduce heat to medium-low. Add the butter to the pan and let it melt gently. Stir in the minced garlic and cook for 1-2 minutes until fragrant but not browned.
  5. Spoon the garlic butter over the chicken thighs and cook for another 2-3 minutes to coat and glaze the chicken.
  6. Remove the pan from heat. Sprinkle chopped fresh parsley and drizzle lemon juice over the chicken. Add a pinch of red pepper flakes if desired.
  7. Serve immediately with the garlic butter sauce spooned over the top.

Pat chicken dry before cooking to ensure a good sear. Use both olive oil and butter to prevent burning the butter. Mince garlic finely but avoid making a paste.
