Instructions

  1. Melt 1 tablespoon of unsalted butter in the microwave or saucepan and let it cool for a minute.
  2. In a small mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk vigorously with a fork for 30 seconds until smooth and glossy.
  3. Add the egg yolk and vanilla extract to the butter mixture. Whisk until fully incorporated.
  4. Add the flour, baking soda, and kosher salt to the wet ingredients. Stir gently until no dry flour remains, being careful not to overmix.
  5. Fold in the chocolate chips.
  6. Shape the dough into a thick disk or ball and place it on a prepared baking sheet or microwave-safe plate.
  7. For oven method: Bake at 350°F (175°C) for 8-10 minutes until edges are golden but center is soft. For microwave method: Microwave on high for 45-60 seconds.
  8. Let the cookie cool for at least 2 minutes to set. Sprinkle with flaky sea salt if desired and serve warm.

Notes

Chill the dough for 10 minutes for a thicker cookie. Do not overbake as small cookies cook quickly. Ensure butter is melted but cooled to avoid cooking the egg yolk. Spoon flour into measuring cup rather than scooping to ensure accuracy.
