  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Fresh parsley or thyme (optional garnish)

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, onion powder, and smoked paprika. Let them sit at room temperature for 15 minutes.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 3-4 minutes per side until deeply browned.
  3. Transfer the seared pork chops to the slow cooker, arranging them in a single layer.
  4. In the same skillet, add the sliced onion and cook over medium heat for 3-4 minutes, scraping up browned bits. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth, Worcestershire sauce, and Dijon mustard. Stir and let simmer for 1-2 minutes.
  6. Pour the onion and broth mixture over the pork chops in the slow cooker.
  7. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until fork-tender.
  8. Carefully remove the pork chops from the slow cooker and tent with foil to keep warm.
  9. Make the cornstarch slurry by whisking together 1 tablespoon cornstarch and 2 tablespoons cold water. Turn the slow cooker to HIGH and pour in the slurry. Stir gently and let cook for 10-15 minutes until the gravy thickens.
  10. Return the pork chops to the slow cooker, spoon gravy over the top, and let sit for 5 minutes. Serve hot, garnished with fresh parsley or thyme if desired.

Notes

Don’t skip the sear—it adds depth and prevents blandness. Use bone-in chops for best results. For thinner chops, reduce cooking time. The gravy thickens as it cools, so don’t overdo the cornstarch. Leftovers keep for up to 4 days in the refrigerator or freeze for up to 3 months.
