Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly and pat dry. Trim off the stem and bottom tip. Slice each squash in half lengthwise and scoop out the seeds and stringy pulp.
  3. Place each squash half cut-side down and slice crosswise into ½-inch thick half-moons.
  4. In a large mixing bowl, whisk together olive oil, maple syrup, salt, and pepper. Add fresh herbs if using.
  5. Add the sliced squash to the bowl and toss until evenly coated.
