  • 1 cup (about 8 oz or 240g) mascarpone cheese, chilled
  • 2 tablespoons honey, plus extra for drizzling
  • 1/3 cup shelled and roughly chopped pistachios (unsalted preferred)
  • 1 teaspoon fresh lemon juice (optional)
  • 1 tablespoon olive oil, for brushing nectarines
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Rinse and halve 4 ripe nectarines, removing the pits. Brush the cut sides lightly with 1 tablespoon olive oil to avoid sticking to the grill.
  2. In a mixing bowl, combine 1 cup mascarpone, 2 tablespoons honey, 1/2 teaspoon vanilla extract (optional), and 1 teaspoon lemon juice. Whisk until smooth and slightly fluffy, about 2-3 minutes. Adjust honey to taste. Refrigerate until ready to use.
  3. Preheat your grill or grill pan to medium-high heat (around 375°F/190°C). Clean and oil the grates.
  4. Place nectarines cut side down on the grill. Grill for 3-4 minutes without moving to get char marks and caramelization. Flip and grill the skin side for another 2 minutes or until warmed through but still firm.
  5. Arrange grilled nectarines on serving plates, cut side up. Spoon generous dollops of honey mascarpone over each half. Sprinkle roughly chopped pistachios on top. Drizzle extra honey if desired.
  6. Serve immediately to enjoy the contrast of warm nectarines and cool mascarpone.

Notes

Brush nectarines with olive oil to prevent sticking and enhance caramelization. Use medium-high heat (around 375°F) to avoid burning. Whisk mascarpone gently to avoid graininess. Honey mascarpone can be made a day ahead and stored in the fridge. If nectarines are underripe, grilling softens and sweetens them. For dairy-free, substitute mascarpone with whipped coconut cream and maple syrup. For nut-free, omit pistachios or use toasted sunflower seeds.
