Ingredients

Scale
  • 2 ¾ cups (345 grams) all-purpose flour, sifted
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (227 grams) unsalted butter, softened, room temperature
  • 1 ¼ cups (250 grams) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • Gel food coloring in purple, blue, black, and white (optional)
  • ½ cup (113 grams) unsalted butter, softened (for buttercream)
  • 2 cups (240 grams) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract (for buttercream)
  • 2 tablespoons (30 ml) whole milk or heavy cream (adjust for consistency)
  • Pinch of salt (for buttercream)

Instructions

  1. Mix Dry Ingredients (5 minutes): In a medium bowl, whisk together 2 ¾ cups sifted all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  2. Cream Butter and Sugar (7 minutes): Using an electric mixer, beat 1 cup softened unsalted butter and 1 ¼ cups granulated sugar on medium speed until light and fluffy—about 3-4 minutes.
  3. Add Egg and Vanilla (2 minutes): Beat in 1 large egg and 2 teaspoons vanilla extract until fully combined, scraping down the bowl as needed.
  4. Incorporate Dry Ingredients (3 minutes): Gradually add the flour mixture in two batches, mixing on low speed just until combined. Avoid overmixing.
  5. Divide and Color Dough (10 minutes): Split dough into 4 small bowls. Add gel food coloring to each—purple, blue, black, and leave one plain white. Mix gently to create swirls.
  6. Form Galaxy Dough Balls (10 minutes): Scoop small amounts from each color bowl and gently press together to make marbled dough balls about 1 ½ inches in diameter. Do not overmix.
  7. Chill Dough (30 minutes minimum): Place dough balls on parchment-lined baking sheets and refrigerate to firm up.
  8. Bake Cookies (12-14 minutes): Preheat oven to 350°F (175°C). Bake chilled dough balls on parchment for 12-14 minutes or until edges are just golden. Let cool completely on a wire rack.
  9. Prepare Vanilla Buttercream (10 minutes): Beat ½ cup softened butter until creamy. Gradually add 2 cups powdered sugar, 1 teaspoon vanilla, 2 tablespoons milk, and a pinch of salt. Beat until light and fluffy. Adjust milk for spreadable consistency.
  10. Assemble Cookie Sandwiches (10 minutes): Spread about 1 tablespoon of vanilla buttercream onto the flat side of one cookie and sandwich with another. Gently press to spread filling evenly.

Notes

Do not overmix the dough to keep cookies tender. Use gel food coloring for vibrant colors without affecting dough texture. Chill dough at least 30 minutes to prevent spreading and maintain marbled look. Adjust buttercream consistency with milk as needed. Cookies look soft when done but will firm up as they cool.
