  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 810 Reese’s peanut butter cups, chopped roughly
  • 1/2 cup (125g) creamy peanut butter
  • 1 to 1 1/2 cups (120-180g) powdered sugar, sifted
  • 1/4 cup (57g) unsalted butter, softened
  • 12 tablespoons milk (dairy or almond milk)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×9 inch pan and line with parchment paper, leaving some overhang.
  2. In a large bowl, whisk together melted butter and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together flour, cocoa powder, and salt.
  4. Gradually fold dry ingredients into wet mixture until just combined and fudgy.
  5. Fold in chopped Reese’s peanut butter cups evenly.
  6. Spread batter evenly in prepared pan and bake for 25-30 minutes. Check at 25 minutes with a toothpick; expect moist crumbs but no wet batter.
  7. Cool brownie completely on a wire rack, about 1 hour. Use a sharp knife to carve an elongated oval football shape with pointed ends.
  8. In a medium bowl, beat softened butter and peanut butter until creamy. Gradually add powdered sugar, then milk and vanilla extract. Adjust consistency with milk to be thick but spreadable.
  9. Spread peanut butter frosting over the carved football. Pipe thin lines of frosting across the top to mimic football laces using a piping bag or zip-top bag with a corner cut.
  10. Slice carefully and serve. Best enjoyed the day it’s made but keeps well for up to 3 days.

Notes

Do not overmix the batter to keep it fudgy. Check the brownie at 25 minutes with a toothpick to avoid overbaking. Use a serrated knife to carve the football shape slowly to prevent crumbling. Frosting can be made a day ahead and refrigerated. For gluten-free, substitute all-purpose flour with gluten-free baking flour. For dairy-free, use coconut oil instead of butter and dairy-free peanut butter. Piping the laces does not need to be perfect; imperfections add charm.
