Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with bourbon, granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon until well combined. Set aside.
  3. In a separate bowl, mix the flour, rolled oats, brown sugar, salt, and cinnamon. Add the cold, cubed butter and cut it into the dry ingredients using a pastry cutter or forks until the mixture resembles coarse crumbs with some pea-sized bits.
  4. Pour the peach mixture into a 9×9-inch baking dish, spreading evenly.
