Ingredients

  • All-purpose flour (or pastry flour)
  • Unsalted butter, very cold and cubed
  • Ice water
  • Salt
  • Sugar (pinch)
  • Pure maple syrup (Grade A Dark or Grade B)
  • Light corn syrup
  • Brown sugar, packed
  • Large eggs, room temperature
  • Unsalted butter, melted
  • Bourbon
  • Vanilla extract (pure)
  • Salt (for filling)
  • Pecan halves
  • Flaky sea salt (e.g., Maldon)

Instructions

  1. In a large bowl, mix flour, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs with pea-sized butter pieces.
  2. Add ice water one tablespoon at a time until dough holds together when pinched. Do not overwork.
  3. Form dough into a disk, wrap in plastic, and refrigerate for at least one hour.
  4. Preheat oven to 350°F (175°C). Place a baking sheet on the bottom rack.
  5. Roll chilled dough into a 12-inch circle on a floured surface. Transfer to pie dish, trim edges, crimp, and prick bottom with a fork.
  6. In a large bowl, whisk eggs until smooth. Add maple syrup, corn syrup, brown sugar, melted butter, bourbon, vanilla, and salt. Whisk vigorously until uniform.
  7. Pour filling into prepared crust. Arrange pecan halves on top in a circular pattern. Sprinkle with a pinch of salt.
  8. Bake for 50-60 minutes until edges are set and center has a slight jiggle.
  9. Cool on a wire rack for at least two hours before slicing.

Notes

Ensure butter is very cold for a flaky crust. Use room temperature eggs to prevent curdling. Do not skip the cooling time as the filling needs to set. Cover crust edges with foil if they brown too quickly. About 25-30% of the alcohol remains after baking.
