A dense, fudgy, and intensely chocolate cake that requires no mixer. This recipe uses boiling water to bloom the cocoa for maximum flavor and results in a moist, sophisticated dessert perfect for any occasion.

  • 1 ½ cups (190g) All-Purpose Flour
  • ¾ cup (70g) Unsweetened Cocoa Powder
  • 1 ½ cups (300g) Granulated Sugar
  • 1 ½ teaspoons Baking Soda
  • 1 teaspoon Salt
  • 2 large Eggs, room temperature
  • ½ cup (120ml) Vegetable Oil
  • 1 cup (240ml) Buttermilk
  • 2 teaspoons Vanilla Extract
  • 1 cup (240ml) Boiling Water
  • ½ cup (85g) Dark Chocolate Chunks (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or non-stick spray and line the bottom with parchment paper. Dust lightly with cocoa powder.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until evenly distributed and clumps are broken up.
  3. Add the eggs, vegetable oil, buttermilk, and vanilla extract to the dry ingredients. Mix until just combined. The batter will be thick and lumpy; scrape down the sides of the bowl.
  4. Carefully pour the boiling water into the batter. Stir gently with a spatula until the batter is smooth, glossy, and liquidy. This blooms the cocoa powder.
  5. If using, gently fold in the dark chocolate chunks until evenly distributed.
  6. Pour the batter into the prepared pan. Bake for 30-35 minutes. Check at 30 minutes by inserting a toothpick into the center; it should come out with moist crumbs attached, not wet batter.
  7. Remove from oven and let cool in the pan for 10 minutes. Invert onto a cooling rack, peel off parchment, and let cool completely before frosting.

Notes

Ensure eggs and buttermilk are at room temperature to prevent the batter from seizing. Do not overmix after adding wet ingredients to avoid a tough texture. The batter will be very thin due to the boiling water; this is normal. For a gluten-free version, use a 1:1 gluten-free baking blend. For dairy-free, substitute buttermilk with almond/oat milk plus lemon juice and use coconut or vegetable oil.
