Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch pan with parchment paper.
  2. Grate about 1 ½ cups of zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat eggs with granulated sugar until well combined. Add vegetable oil, vanilla extract, lemon zest, and lemon juice; whisk until smooth.
  5. Gradually add dry ingredients to the wet mixture and stir gently until just combined.
  6. Fold in the squeezed grated zucchini until evenly distributed.
  7. Pour batter into the prepared pan and spread evenly. Tap the pan to release air bubbles.
  8. Bake for 30-35 minutes. Check doneness with a toothpick; it should come out with a few moist crumbs but no raw batter.
  9. Cool bars completely in the pan on a wire rack for about 20 minutes before glazing.
  10. Mix powdered sugar with 2-3 tablespoons lemon juice until smooth and pourable.
  11. Drizzle or spread glaze evenly over cooled bars and allow to set for at least 15 minutes.
  12. Slice into squares or rectangles and serve.
