Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly. Grate zucchini and squeeze out excess moisture.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, mix melted butter, granulated sugar, and brown sugar until smooth.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Stir in buttermilk, then fold in grated zucchini.
  6. Gradually add dry ingredients to wet mixture, folding gently until just combined.
  7. Fold in chocolate chips evenly.
  8. Spoon batter into muffin cups, filling about ¾ full.
  9. Bake for 22-25 minutes until a toothpick inserted comes out with a few moist crumbs.
  10. Cool muffins in pan for 10 minutes, then transfer to wire rack to cool completely.
