Instructions

  1. Brown the butter: Melt butter in a medium saucepan over medium heat. Stir constantly until it foams, then subsides. Listen for a crackle and watch for golden brown milk solids and a nutty aroma. Remove from heat immediately and pour into a heat-safe bowl to cool for 5 minutes.
  2. Mash the bananas: In a large mixing bowl, peel and mash the ripe bananas until mostly smooth with a few small lumps.
