A rich, easy-to-make dessert that combines the deep, nutty flavor of brown butter with a sticky pecan filling and a fluffy biscuit-like cobbler topping. It offers the taste of classic pecan pie without the hassle of making a crust.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 2 cups pecan halves
  • 2 cups packed brown sugar
  • 1/2 cup heavy cream
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Melt 1 cup of butter in a medium saucepan over medium heat. Swirl occasionally until foam subsides and milk solids turn golden brown with a nutty aroma (5-7 minutes). Remove from heat and let cool for 5 minutes.
  3. In a large bowl, whisk eggs until light and fluffy. Add brown sugar, heavy cream, vanilla extract, and 1/2 teaspoon salt. Whisk until smooth.
  4. Slowly drizzle in the warm brown butter while whisking constantly to temper the eggs. Pour this mixture into the prepared baking dish.
  5. Spread pecan halves evenly over the liquid filling.
  6. In a separate bowl, whisk together flour, baking powder, and 1/2 teaspoon salt. Add milk and 2 tablespoons melted butter. Stir gently until a shaggy dough forms.
  7. Drop large spoonfuls of the dough over the pecans and filling in clusters.
  8. Bake for 45-50 minutes until topping is golden brown and filling is bubbling vigorously. Tent with foil if topping browns too quickly.
  9. Cool for at least 20 minutes before serving to allow filling to set.

Notes

Ensure brown butter is warm, not hot, when mixing with eggs to prevent scrambling. Toasting pecans beforehand enhances flavor. The filling will be runny when hot but sets as it cools. Leftovers keep well in the fridge for 3 days or can be frozen for 2 months.
