Hearty Paleo Beef Chili with Sweet Potatoes

A comforting and hearty paleo-friendly beef chili slow-cooked with sweet potatoes and a blend of spices, perfect for cozy nights and easy meal prep.

  • 1.5 lbs ground beef (preferably grass-fed)
  • 2 medium sweet potatoes, peeled and diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (14 oz) diced tomatoes (fire-roasted preferred)
  • 1 cup beef broth (low-sodium)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Sea salt, to taste
  • Black pepper, to taste
  • 1 tbsp olive oil
  • Optional garnishes: fresh cilantro, avocado slices, lime wedges

Instructions

  1. Peel and dice the sweet potatoes into roughly 1/2-inch cubes. Dice the onion and mince the garlic cloves.
  2. Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spoon. Cook until browned and no longer pink, about 6 to 8 minutes. Drain excess fat if needed.
  3. In the same skillet, add diced onion and garlic. Cook until fragrant and translucent, about 2 to 3 minutes.
  4. Add the browned beef, sautéed onion and garlic, diced sweet potatoes, tomato paste, diced tomatoes, beef broth, chili powder, cumin, smoked paprika, salt, and pepper to the slow cooker. Stir well to combine.
  5. Set slow cooker to low and cook for 6 hours, stirring once or twice if possible.
  6. About 15 minutes before serving, taste and adjust seasoning with more salt, pepper, or chili powder if desired. Add a splash of beef broth if chili is too thick.
  7. Ladle chili into bowls and garnish with fresh cilantro, avocado slices, or a squeeze of lime.

Notes

Browning the beef and sautéing the onions and garlic before slow cooking enhances flavor. For thicker chili, remove the lid during the last 30 minutes of cooking. You can substitute ground turkey or bison for beef, or use butternut squash instead of sweet potatoes. If no slow cooker is available, simmer in a Dutch oven on the stove for about 90 minutes.
