  • 1.5 pounds (680g) ground turkey (preferably lean, 93% lean recommended)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 cups broccoli florets (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups cooked quinoa or brown rice
  • 3 tablespoons low-sodium soy sauce or tamari
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger

Instructions

  1. Rinse 1 cup of quinoa under cold water using a fine-mesh strainer. Add quinoa and 2 cups of water (or low-sodium broth) to a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  2. Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat. Add chopped onions and sauté for 3-4 minutes until translucent. Add minced garlic and cook for 1 minute until fragrant.
  3. Add ground turkey to the skillet. Break it up with a wooden spoon and cook for 7-8 minutes until browned and cooked through. Season with smoked paprika, dried oregano, salt, and pepper. Stir well to distribute seasoning evenly.
  4. Chop broccoli into bite-sized florets, dice red bell pepper and zucchini, and halve cherry tomatoes.
  5. In a separate skillet, sauté broccoli, bell pepper, and zucchini over medium heat with a splash of olive oil for 5-7 minutes until tender-crisp. Add cherry tomatoes in the last 2 minutes.
  6. In a small bowl, whisk together soy sauce or tamari, apple cider vinegar, honey or maple syrup, and grated fresh ginger.
  7. Add cooked veggies to the turkey skillet, pour the sauce over, and toss to coat evenly. Heat through for 2 minutes.
  8. Divide cooked quinoa evenly into 5-7 airtight containers. Top each with turkey and veggie mix. Let cool before sealing and refrigerating.
  9. Store in the refrigerator for up to 5 days or freeze individual portions for up to 3 months.

Notes

Do not overcrowd the pan when browning turkey to ensure proper searing. Use fresh garlic and ginger for best flavor. Keep veggies slightly crisp by not overcooking. Adjust sauce balance by adding water or honey if too salty. Use a wooden spoon or silicone spatula to protect non-stick surfaces. Quinoa can be swapped for brown rice or cauliflower rice for low-carb option. Freeze individual portions for up to 3 months.
