  • Salt and pepper to taste (about 1/2 teaspoon flaky sea salt and 1/4 teaspoon freshly cracked black pepper)

Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to heat for 10-15 minutes.
  2. Wash and chop broccoli into bite-sized florets, peel and halve baby carrots if large, and cut red bell peppers into 1-inch pieces.
  3. In a large bowl, toss the chopped veggies with 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper until evenly coated.
  4. Arrange the veggies in a single layer on a rimmed baking sheet, spacing them out to avoid overcrowding.
  5. Roast the vegetables for 20-25 minutes, stirring or flipping halfway through (around 12 minutes) to ensure even browning. Remove any pieces that cook faster early.
  6. Meanwhile, rinse 1/3 cup dry quinoa or farro under cold water. For quinoa, combine with 2/3 cup water in a saucepan, bring to a boil, reduce heat, cover, and simmer for 15 minutes. For farro, use 1 cup water and simmer for about 25 minutes until tender but chewy. Drain excess water.
  7. Once veggies are done, transfer them to a bowl and add the cooked grain. Drizzle with 1 tablespoon fresh lemon juice and adjust seasoning with salt and pepper as needed.
  8. Serve warm or at room temperature. Garnish with fresh herbs or toasted nuts if desired.

Notes

Do not overcrowd the baking sheet to avoid steaming the veggies. Add lemon juice after roasting to prevent mushiness. Rinse quinoa before cooking to remove bitterness.
