Instructions

  1. Melt the butter in a microwave-safe bowl on high for 30-45 seconds. Let it cool for a minute so it doesn’t cook the egg.
  2. Add the granulated sugar and brown sugar to the melted butter. Stir vigorously until the mixture resembles wet sand.
  3. Add the egg yolk and vanilla extract. Mix until the mixture forms a smooth, glossy paste.
  4. Add the flour and salt. Stir gently just until the flour streaks disappear; do not overmix.
  5. Fold in the chocolate chips, reserving a few for topping if desired.
  6. Transfer the dough to a 6-inch skillet. Press down and spread evenly to the edges, leaving the center slightly thicker.
  7. Microwave on high for 2 minutes. Check the cookie; edges should be set and golden, while the center remains soft and slightly undercooked. Add 15-30 seconds if needed based on microwave power.
  8. Let the cookie sit in the skillet for 2 minutes to finish cooking from residual heat. Sprinkle with sea salt flakes if using and serve warm.

Notes

Do not overcook the cookie; the center should be jiggly when removed from the microwave as it will firm up while cooling. Ensure melted butter is not too hot to avoid scrambling the egg. If using a larger skillet, the cookie will be thinner and cook faster. For a gluten-free version, use a 1-to-1 gluten-free flour blend.
