  • 1/2 cup (120ml) heavy whipping cream, chilled
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries (optional)
  • Whipped cream dollops for accent (optional)

Instructions

  1. Slice the watermelon by trimming off the rind on all sides to create a large rectangular pizza crust about 1 to 1.5 inches thick. Aim for a flat surface.
  2. In a mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth and creamy (2-3 minutes). In a separate bowl, whip the heavy cream until soft peaks form (3-4 minutes). Fold the whipped cream into the cream cheese mixture until fluffy.
  3. Spread the cream cheese mixture evenly across the watermelon slice, leaving about a half-inch border clear. The layer should be about 1/4 inch thick.
  4. Arrange blueberries in the top left corner to form the blue canton of the flag. Arrange strawberries or raspberries in horizontal stripes across the rest of the watermelon, alternating with sections of cream cheese base showing as white stripes. Add whipped cream dollops sparingly if desired.
  5. Chill the assembled watermelon flag fruit pizza in the refrigerator for at least 30 minutes to let the base set and flavors meld.
