A refreshing and budget-friendly summer salad combining juicy watermelon, crumbly feta, and fresh mint with a light olive oil and lime dressing.

  • 4 cups watermelon, cubed (ripe, seedless)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice (or lemon juice)
  • Pinch of sea salt
  • Light sprinkle of freshly ground black pepper (optional)

Instructions

  1. Rinse the watermelon under cool water. Slice off the ends to create a stable base. Cut the watermelon into 1-inch cubes.
  2. Crumble about 1 cup of feta cheese into bite-sized pieces. For creamier texture, lightly press feta with a fork.
  3. Rinse fresh mint leaves, pat dry, and roughly chop to release aroma without bruising.
  4. In a small bowl, whisk together 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lime juice, a pinch of sea salt, and a light sprinkle of black pepper if desired.
  5. In a mixing bowl, gently toss watermelon cubes, crumbled feta, and chopped mint. Drizzle the dressing over the salad and toss lightly to coat evenly. Avoid overmixing.
  6. Taste and adjust seasoning if needed. Transfer salad to a serving dish and garnish with a few whole mint leaves.

Notes

Add dressing just before serving to prevent watermelon from becoming watery. Avoid salting watermelon directly. Fresh mint can be swapped with basil. For dairy-free, replace feta with diced avocado or vegan cheese. Optional additions include toasted nuts, jalapeños, or balsamic vinegar for extra flavor.
