  • 8 ounces (225 g) fresh mozzarella balls (Bocconcini or Ciliegine)
  • Fresh basil leaves, washed and patted dry
  • Balsamic glaze made from: 1 cup (240 ml) balsamic vinegar, 2 tablespoons (28 g) brown sugar, 1 tablespoon (21 g) honey, 1 minced garlic clove, pinch of salt
  • Extra virgin olive oil, for brushing tomatoes
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Wooden skewers or toothpicks

Instructions

  1. Prepare the balsamic glaze: In a small saucepan, combine balsamic vinegar, brown sugar, honey, minced garlic, and salt. Bring to a simmer over medium heat, stirring occasionally. Reduce heat to low and let it gently bubble until thickened and syrupy, about 10 minutes. Remove from heat and let cool.
  2. Prep the ingredients: Rinse cherry tomatoes and pat dry. Lightly brush each tomato with extra virgin olive oil. Drain and pat dry mozzarella balls. Rinse and dry basil leaves thoroughly.
  3. Assemble the skewers: On each wooden skewer or toothpick, thread one cherry tomato, followed by a folded basil leaf, then a mozzarella ball. Repeat for desired quantity (about 20 skewers).
  4. Season and glaze: Arrange skewers on a serving platter. Lightly sprinkle with salt and freshly ground black pepper. Drizzle the cooled balsamic glaze generously over the top just before serving.
  5. Final touches: Optionally, scatter a few extra basil leaves around the platter. Serve immediately or refrigerate for up to 2 hours before serving (do not glaze too far in advance).
