A quick and refreshing cucumber dill salad tossed with a creamy Greek yogurt dressing, perfect for warm weather and last-minute gatherings.

Ingredients

Scale
  • 3 large cucumbers, thinly sliced (English cucumbers work best for fewer seeds)
  • 1/4 cup fresh dill, finely chopped
  • 1/2 small red onion, thinly sliced (optional)
  • 1/4 teaspoon salt (adjust to taste)
  • Freshly ground black pepper, to taste
  • 1 cup full-fat Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon olive oil (extra virgin)
  • 1 small garlic clove, minced (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper, to taste

Instructions

  1. Rinse and dry the cucumbers thoroughly. Using a sharp knife or mandoline, slice them into thin rounds, about 1/8-inch thick (3 mm). Set aside in a mixing bowl.
  2. Thinly slice the red onion into half-moons. If raw onion is too pungent, soak the slices in cold water for 5 minutes, then drain well. Add to the cucumbers.
  3. Finely chop fresh dill, aiming for about 1/4 cup packed. Add it to the cucumber and onion mix.
  4. In a small bowl, whisk together Greek yogurt, fresh lemon juice, olive oil, minced garlic, and honey (if using). Season with salt and pepper to taste. Whisk until smooth and creamy.
  5. Pour the creamy dressing over the cucumber mixture. Gently toss everything together, making sure each slice is coated. Let the salad sit for 10-15 minutes at room temperature to meld flavors (or chill if preferred).
  6. Before serving, taste and adjust seasoning if needed.

Notes

For extra crisp cucumbers, salt slices lightly and drain in a colander for 10 minutes before mixing with dressing. Toss just before serving to keep cucumbers crunchy. Dressing can be thinned with a teaspoon or two of water or extra lemon juice if too thick. Leftovers keep up to 2 days refrigerated but cucumbers soften over time.
