  • Juice of 1 large lime (about 2 tablespoons)
  • 1 to 2 teaspoons Tajin seasoning
  • 1 teaspoon honey or agave syrup (optional)
  • A small handful fresh mint leaves, chopped (optional)
  • A pinch of sea salt (optional)

Instructions

  1. Peel and dice 2 medium ripe mangoes into bite-sized cubes.
  2. Roll the lime on the counter, cut it, and squeeze out about 2 tablespoons of fresh juice, removing any seeds.
  3. In a medium bowl, combine the diced mango, fresh lime juice, and 1 teaspoon of Tajin. Stir gently to coat all the mango pieces evenly.
  4. Taste and adjust seasoning: add more Tajin for heat or drizzle a teaspoon of honey or agave syrup for extra sweetness if desired.
  5. Chop a handful of fresh mint leaves and fold them into the fruit cup.
  6. Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld, covering with plastic wrap if chilling.

Use ripe but firm mangoes to avoid mushiness. Fresh lime juice is essential for bright flavor. Add Tajin gradually to avoid overpowering the sweetness.
