A simple, elegant salad that highlights the natural sweetness of heirloom tomatoes paired with the rich, luscious texture of burrata cheese. Ready in under 15 minutes, perfect for summer and impromptu gatherings.

Ingredients

Scale
  • 4 medium-sized heirloom tomatoes, assorted colors and shapes
  • 8 ounces creamy burrata cheese
  • A handful of fresh basil leaves, torn or whole
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (optional but recommended)
  • Sea salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash and dry the tomatoes thoroughly to avoid diluting the dressing.
  2. Slice the heirloom tomatoes into 1/4-inch thick slices, or halves/quarters if large.
  3. Arrange the tomato slices on a serving platter, overlapping slightly and alternating colors and shapes.
  4. Tear the burrata gently by hand into bite-sized pieces and scatter evenly over the tomatoes.
  5. Add fresh basil leaves, either whole or torn, over the salad.
  6. Drizzle about 2 tablespoons of extra virgin olive oil over the cheese and tomatoes.
  7. Optionally drizzle about 1 tablespoon of balsamic glaze for a sweet tang.
  8. Season with flaky sea salt and freshly ground black pepper to taste.
  9. Let the salad rest for 5 minutes to allow flavors to meld and olive oil to soak in. Serve at room temperature.

Notes

Use a serrated knife if possible to slice tomatoes cleanly without squashing. Tear burrata by hand to preserve creamy center. Drizzle olive oil last to keep salad fresh. Let salad rest 5 minutes before serving. Prep tomatoes up to 2 hours ahead, add burrata and dressing just before serving.
