  • 1/4 tsp salt (1.5g)
  • 1/4 cup unsweetened almond milk (60 ml)
  • Butter or coconut oil, for cooking

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 20 minutes or microwave for 15 seconds.
  2. In a medium bowl, beat the softened cream cheese with 3 large eggs until smooth and creamy (about 2-3 minutes with a hand mixer).
  3. Add 1 tsp vanilla extract and 1/4 cup unsweetened almond milk, mixing until combined.
  4. In a separate bowl, whisk together 1 cup almond flour, 1 tsp baking powder, 1/2 tsp cinnamon (optional), and 1/4 tsp salt.
  5. Gradually fold the dry ingredients into the wet ingredients with a spatula until just combined. If batter is too thick, add a splash more almond milk.
  6. Heat a non-stick skillet over medium-low heat and add a small amount of butter or coconut oil.
  7. Scoop about 1/4 cup batter per pancake onto the skillet. Cook for 3-4 minutes until bubbles form and edges look set.
  8. Flip carefully and cook another 2-3 minutes until golden and cooked through.
