These fluffy pancakes combine tangy buttermilk with fresh or frozen huckleberries, topped with a creamy whipped butter for a delicious and easy homemade breakfast.

  • 1 large egg (room temperature)
  • 3 tablespoons unsalted butter, melted and slightly cooled (plus more for cooking)
  • 1 cup fresh or frozen huckleberries (if frozen, do not thaw)
  • ½ cup unsalted butter, softened (for whipped butter)
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt (for whipped butter)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, whisk buttermilk with egg until smooth, then stir in melted butter.
  3. Pour wet ingredients into dry ingredients and stir gently until just combined; let batter rest for 5-10 minutes.
  4. Gently fold in huckleberries, being careful not to crush them.
  5. Preheat skillet or griddle over medium heat and coat with a small pat of butter.
  6. Pour ¼ cup batter onto the hot pan; cook until bubbles form and edges look set, about 2-3 minutes.
  7. Flip and cook another 1-2 minutes until golden and cooked through.
  8. While pancakes cook, beat softened butter with powdered sugar, vanilla extract, and salt until light and fluffy.
  9. Stack pancakes, top with whipped butter and extra huckleberries, and optionally drizzle with maple syrup or honey.

Notes

Do not overmix the batter to keep pancakes fluffy. Let the batter rest for 5-10 minutes before cooking. Use medium heat to avoid burning. Fold in berries gently to prevent color bleeding. Whipped butter can be made ahead and stored in the fridge.
