Rich, creamy, and festive jello shots that mimic the taste of red velvet cake with cream cheese frosting. These easy, no-bake treats are perfect for holiday parties and come together in under an hour of prep time.

  • 1/2 cup boiling water (for gelatin)
  • 1 small box (approx. 15 oz) red velvet cake mix
  • 1 cup boiling water (for cake mix)
  • 1 tablespoon unsweetened cocoa powder
  • 4 oz full-fat cream cheese, softened
  • 1/4 cup heavy cream
  • 1/2 cup neutral vodka
  • Red gel food coloring (optional, for vibrancy)
  • White chocolate chips (for garnish)

Instructions

  1. In a large heatproof bowl, sprinkle unflavored gelatin powder over 1/4 cup of boiling water. Stir quickly and let sit for 1 minute to bloom.
  2. Add the remaining 1 cup of boiling water to the gelatin mixture. Whisk in the dry red velvet cake mix and cocoa powder until completely smooth and lump-free.
  3. Let the red jello mixture cool at room temperature until it is warm to the touch but not hot (approx. body temperature). This prevents the cream cheese from curdling.
  4. In a separate medium bowl, beat the softened cream cheese with heavy cream using a whisk or hand mixer until completely smooth and creamy.
  5. Slowly pour the cream cheese mixture into the cooled red jello base while whisking constantly until uniform in color and texture.
  6. Stir in the vodka gently but thoroughly, avoiding excessive whipping to prevent air bubbles.
  7. Carefully pour the mixture into small plastic shot cups, filling them about 3/4 full.
  8. Refrigerate for at least 4 hours, or overnight, until completely set.
  9. Garnish with crushed white chocolate or mini red candies just before serving.

Notes

Ensure the cream cheese is fully softened to avoid lumps. Do not add cream cheese to the jello base if it is still hot, as it will curdle. Alcohol interferes with setting, so do not exceed the recommended amount of vodka. For non-alcoholic versions, substitute vodka with water or heavy cream. Store covered in the refrigerator for up to 5 days.
