These easy turkey avocado pinwheel lunchbox wraps are quick, kid-friendly, and perfect for picky eaters. They combine creamy avocado, lean turkey, and mild cheddar cheese wrapped in soft tortillas for a satisfying and mess-free lunch.

  • 6 ounces cooked turkey breast slices, thinly sliced
  • 1 medium ripe avocado, mashed with a fork until creamy but with some texture
  • 1 teaspoon fresh lime juice
  • Pinch of salt, to taste
  • 2 tablespoons mayonnaise, preferably full-fat (or vegan mayo)
  • ½ cup shredded cheddar cheese (about 50 grams), mild or sharp
  • ½ cup baby spinach leaves (about 15 grams), optional
  • Dash of freshly ground black pepper

Instructions

  1. Prepare the avocado spread: In a medium bowl, mash 1 ripe avocado with a fork until mostly smooth but still a little chunky. Add 1 teaspoon fresh lime juice, 2 tablespoons mayonnaise, a pinch of salt, and a dash of black pepper. Mix until combined. This should take about 5 minutes.
  2. Lay out the tortillas: Place each 8-inch tortilla flat on a clean surface or cutting board. If they feel stiff, microwave them for 10 seconds wrapped in a damp paper towel to soften.
  3. Spread the avocado mixture: Evenly slather about 2 tablespoons of the avocado spread over each tortilla, leaving a small border around the edges to help the wrap seal better. Use the back of a spoon or a butter knife.
  4. Add turkey slices: Layer about 2 ounces (55 grams) of thinly sliced turkey breast evenly over the avocado spread on each tortilla.
  5. Sprinkle cheese: Add roughly 2 tablespoons of shredded cheddar cheese over the turkey.
  6. Add spinach (optional): Place a small handful of baby spinach leaves on top of the cheese for freshness and a little crunch.
  7. Roll tightly: Starting from one edge, roll each tortilla up firmly but gently to avoid tearing. Optionally, wrap tightly in plastic wrap or parchment and chill for 10 minutes to help them hold their shape.
  8. Slice into pinwheels: Using a sharp knife, cut each rolled tortilla into 1-inch (2.5 cm) thick rounds. Arrange on a plate or pack into lunchboxes. This step usually takes about 5 minutes.
  9. Serve or store: These wraps are best eaten within a few hours but will keep in the fridge up to 24 hours if wrapped properly.

Notes

If the avocado spread feels too thick, add a tiny splash of water or more lime juice to loosen it. Warm tortillas if they crack while rolling.
