  • 4 large flour tortillas (10-inch)
  • 4 oz cream cheese, softened
  • 810 slices deli-sliced turkey breast
  • 45 slices provolone or Swiss cheese
  • 1 handful fresh spinach leaves
  • 1/2 red bell pepper, thinly sliced (optional)
  • 1 tsp Dijon mustard (optional)
  • 1 tsp everything bagel seasoning (optional)
  • Salt and black pepper to taste

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20 minutes or microwaving for 10-15 seconds.
  2. In a small bowl, mix the softened cream cheese with Dijon mustard (if using), a pinch of salt, and black pepper until smooth.
  3. Lay a tortilla flat on a cutting board. Spread a thin, even layer of the cream cheese mixture over the entire tortilla.
  4. Place 2-3 slices of turkey over the cream cheese, overlapping slightly to cover the surface.
  5. Lay 1-2 slices of cheese on top of the turkey, overlapping as needed.
  6. Scatter a handful of spinach leaves over the cheese. If using bell pepper, place a single row down the center.
  7. Starting from the bottom edge, roll the tortilla tightly away from you, tucking in the filling as you go. Press the seam to seal.
  8. Wrap the rolled tortilla tightly in plastic wrap or parchment paper, twisting the ends. Repeat with remaining tortillas.
  9. Refrigerate the wrapped rolls for at least 30 minutes to firm up.
  10. Unwrap the rolls and slice into 1-inch thick rounds using a sharp serrated knife with a gentle sawing motion.
  11. Arrange the pinwheels in a lunchbox or serving dish. Optionally, secure each with a toothpick.

Notes

Chilling the rolls for at least 30 minutes is essential for clean slicing. Use a serrated knife for best results. Make ahead up to 2 days in advance. For gluten-free, use gluten-free tortillas. For low-carb, use lettuce wraps.
