  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 4×2-inch loaf pan with butter or cooking spray, optionally lining the bottom with parchment paper.
  2. Wash and shred the zucchini using a box grater into a bowl. Aim for 1 cup of shredded zucchini; do not squeeze out the liquid.
  3. In a medium mixing bowl, whisk together the vegetable oil, egg, and sugar until smooth and slightly pale (1-2 minutes).
  4. In a separate small bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg to remove clumps.
  5. Pour the dry ingredients into the wet ingredients and gently fold together with a spatula until no flour streaks remain. Do not overmix.
  6. Gently fold in the shredded zucchini. The batter will be thick and slightly lumpy.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not squeeze the water out of the zucchini as it provides essential moisture. Ensure the egg is at room temperature for better emulsification. Measure flour by scooping and leveling, not packing, to avoid dense bread. For gluten-free, use a 1:1 gluten-free baking blend. For vegan, use a flax egg and coconut oil.
