This creamy, tangy, and mildly spicy white chicken chili is the ultimate set-it-and-forget-it game day meal. Made with tender chicken, white beans, salsa verde, and a velvety cream cheese broth, it’s a crowd-pleasing favorite that lets you enjoy the party.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans (Great Northern or cannellini), drained and rinsed
  • 1 cup salsa verde
  • 1 can (4 oz) diced green chiles
  • 1 cup frozen corn
  • 1 cup low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 oz cream cheese, softened and cubed
  • ½ cup heavy cream or half-and-half
  • Juice of 1 lime
  • Optional garnishes: fresh cilantro, shredded Monterey Jack cheese, sliced jalapeños, diced avocado, sour cream, tortilla chips or strips

Instructions

  1. Layer the Base: Place the chicken breasts in the bottom of your slow cooker. Sprinkle the drained and rinsed white beans, diced green chiles, and frozen corn over the top. Do not stir yet.
  2. Add the Liquids and Spices: Pour the chicken broth and salsa verde over the ingredients. Sprinkle the ground cumin, garlic powder, onion powder, salt, and black pepper evenly over everything. Give a gentle stir to combine the liquids and spices, but try not to disturb the chicken too much.
  3. Cook Low and Slow: Put the lid on the slow cooker and set to LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is fork-tender and shreds easily.
  4. Shred the Chicken: Carefully remove the chicken breasts to a cutting board or plate. Using two forks, shred the chicken into bite-sized pieces.
  5. Incorporate the Creaminess: While the chicken is resting, add the softened and cubed cream cheese to the slow cooker. Stir gently until completely melted into the broth.
  6. Return the Chicken: Add the shredded chicken back into the slow cooker. Stir to combine with the creamy broth, beans, and corn.
  7. Finish with Richness and Brightness: Pour in the heavy cream (or half-and-half) and fresh lime juice. Stir well. Let the chili cook for another 10-15 minutes on LOW until heated through. Taste and adjust salt and pepper as needed.

Notes

For a thicker chili, remove the lid and cook on HIGH for an additional 15-20 minutes. For a thinner chili, stir in a splash more chicken broth. Always thaw chicken completely before adding to the slow cooker. This chili tastes even better the next day.
