These sliders are a no-drama game day snack with caramelized peppers, melting onions, and crispy-edged sausage, all roasted on a single sheet pan for minimal fuss and maximum flavor.

  • 6 links sweet Italian sausage (about 1.5 lbs)
  • 3 large bell peppers (mixed colors), sliced into 1/2-inch strips
  • 1 large yellow onion, sliced into 1/4-inch half-moons
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 6 slices provolone cheese
  • 12 slider buns

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle of the oven.
  2. Prep the vegetables: Slice the bell peppers into 1/2-inch thick strips. Slice the onion into 1/4-inch half-moons. Mince the garlic cloves. Toss the peppers and onions in a large bowl with 2 tablespoons of olive oil, the dried oregano, and a generous pinch of salt and black pepper.
  3. Prep the sausage: Slice each sausage link in half lengthwise. Toss the sausage halves with the remaining 1 tablespoon of olive oil.
  4. Arrange on the sheet pan: Spread the seasoned peppers and onions in an even layer on the lined sheet pan. Nestle the sausage halves, cut-side down, into the vegetables.
  5. Roast for 20 minutes: Place the pan in the oven and roast undisturbed for 20 minutes.
  6. Flip and add garlic: Remove the pan from the oven. Use tongs to flip the sausage halves over. Sprinkle the minced garlic evenly over the peppers and onions, then toss everything gently to combine. Return the pan to the oven.
  7. Roast for another 10-15 minutes: Continue roasting until the sausage is cooked through (internal temperature of 160°F / 71°C) and the peppers are soft and caramelized with slightly charred edges.
  8. Add the cheese: Remove the pan from the oven. Place a slice of provolone cheese on top of each sausage half. Return the pan to the oven for 2-3 minutes, just until the cheese is melted and bubbly.
  9. Assemble the sliders: Split the slider buns. Place one cheesy sausage half on the bottom half of each bun. Top with a generous spoonful of the roasted peppers and onions. Add the top bun and serve immediately.

Notes

For extra-crispy edges on the sausage, switch the oven to broil for the last 2 minutes of roasting. Watch closely so the cheese doesn’t burn. Toast the buns before assembling to prevent sogginess.
