  • 1 1/2 cups all-purpose flour (190 g / 6.7 oz)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, cold and cubed (85 g / 3 oz)
  • 3/4 cup cold buttermilk (180 ml / 6 fl oz)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
  2. In a medium bowl, gently toss blackberries with 3/4 cup sugar, 2 tablespoons flour, lemon juice, and vanilla extract. Coat berries without mashing.
  3. Pour the blackberry mixture evenly into the prepared baking dish and spread slightly to level.
  4. In a large bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, salt, and 2 tablespoons sugar.
  5. Add cold, cubed butter to the flour mixture. Use a pastry cutter or fingers to rub butter into flour until pea-sized lumps form.
  6. Pour cold buttermilk into the flour and butter mixture. Gently stir with a wooden spoon until just combined; dough should be sticky and lumpy.
  7. Drop biscuit dough in dollops over the blackberry filling, leaving gaps so filling peeks through.
  8. Bake for 35-40 minutes until juices bubble and biscuit topping is golden brown. Tent with foil if biscuits brown too quickly.
  9. Let cobbler cool for at least 15 minutes before serving to allow filling to thicken. Serve warm with vanilla ice cream or whipped cream.
