  • 1 medium ripe banana, mashed

  • 1/3 cup mini chocolate chips

Instructions

  1. Mash the banana in a large mixing bowl with a fork until mostly smooth.
  2. Add the peanut butter and honey, then stir until well combined into a thick, creamy paste.
  3. Mix in the rolled oats until fully incorporated; the dough should be thick and slightly sticky.
  4. Fold in the mini chocolate chips (and any optional add-ins like chia seeds or coconut).
  5. Chill the mixture in the refrigerator for about 20 minutes to firm up.
  6. Using a cookie scoop or tablespoon, roll the mixture into 1-inch balls (about 16-18 bites).
  7. Place the bites on a parchment-lined baking sheet and refrigerate for another 15-20 minutes for best texture.
  8. Store in an airtight container in the refrigerator for up to a week.

Notes
