Instructions

  1. In a medium bowl, combine 8 ounces of softened cream cheese with 2 tablespoons mayonnaise. Mix until smooth and creamy. Add finely diced red bell pepper, thinly sliced green onions, and a pinch of salt and pepper. Stir gently to evenly distribute.
  2. Place one 8-inch flour tortilla flat on a clean surface. Spread about 2 tablespoons of the cream cheese mixture evenly over the tortilla, leaving a small border around the edges.
  3. Arrange a few fresh spinach leaves over the cream cheese layer (about 6 leaves per tortilla). Then, layer slices of turkey or ham evenly on top, followed by a sprinkle of shredded cheddar cheese.
  4. Starting at one edge, roll the tortilla up tightly but gently, so the filling stays in place. Wrap the rolled tortilla tightly in plastic wrap or parchment paper to hold its shape.
  5. Place the wrapped pinwheels in the fridge for at least 30 minutes to firm up.
  6. After chilling, unwrap the roll and use a sharp knife to cut into 1/2-inch slices. You should get about 8 pinwheels per tortilla. Dip the knife in warm water between cuts for cleaner slices if needed.
  7. On each skewer, alternate threading strawberries (halved), blueberries, mini marshmallows, and watermelon cubes. Aim for 3-4 pieces per skewer to keep them bite-sized and easy to handle.
