A quick and flavorful weeknight dinner featuring crispy-skinned chicken thighs seared in a skillet with a rich garlic butter sauce. This one-pan meal is low-stress, delicious, and perfect for busy evenings.

  • 4–6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive or avocado oil
  • 4–5 cloves fresh garlic, minced
  • 1/2 cup unsalted butter
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • Kosher salt and freshly cracked black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken thighs completely dry with paper towels and season generously with salt and black pepper. Let sit at room temperature for 15-20 minutes.
  2. Heat a large skillet (preferably cast-iron) over medium-high heat with 1 tablespoon of oil until hot but not smoking.
  3. Place chicken thighs skin-side down in the pan. Sear undisturbed for 5-7 minutes until skin is deep golden brown and crispy. Flip and cook for another 3-4 minutes.
  4. Reduce heat to medium. Add butter to the pan. Once melted and foaming, add minced garlic and red pepper flakes. Cook for 30-60 seconds until fragrant.
  5. Tilt the pan and baste the chicken with the hot butter-garlic mixture for 2-3 minutes.
  6. Pour in chicken broth and sprinkle with dried thyme. Scrape the bottom of the pan to release browned bits. Simmer for 2-3 minutes until sauce thickens slightly.
  7. Check internal temperature with a meat thermometer; it should reach 165°F (74°C). If needed, cover and cook for another 2-3 minutes.
  8. Remove chicken from pan and let rest for 5 minutes. Pour remaining sauce over chicken and garnish with fresh parsley before serving.

Notes

Ensure chicken is completely dry before searing to achieve crispy skin. Do not crowd the pan; cook in batches if necessary. If using salted butter, reduce added salt. For a lighter option, swap butter for olive oil. This recipe is naturally gluten-free if using gluten-free broth.
