These soft, naturally sweet breakfast cookies are made with simple ingredients like bananas, oats, and peanut butter. They’re quick to prepare, perfect for busy mornings, and a crowd-pleaser for both kids and adults.

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/3 cup mix-ins of your choice (e.g., dark chocolate chips, chopped walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until smooth with a few small lumps.
  3. Add the peanut butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Stir until well combined.
  4. Add the rolled oats, cinnamon, salt, and baking powder. Stir until evenly distributed, ensuring no dry pockets remain.
  5. Fold in the mix-ins (e.g., chocolate chips, nuts) until evenly spread. Do not overmix.
  6. Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie with the back of a spoon.
  7. Bake for 10-12 minutes, until the edges are golden brown and the centers are set. For softer cookies, bake 10 minutes; for crispier edges, bake 12 minutes.
  8. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use very ripe bananas with brown spots. If dough is too dry, add 1-2 tablespoons of milk. If too wet, add extra oats. Cookies can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months. For perfectly round cookies, shape them with a round cutter or glass rim right after baking.
