Instructions

  1. In a large mixing bowl, combine 1 cup creamy peanut butter and 1/2 cup honey. Stir until fully combined.
  2. Add 1 cup old-fashioned rolled oats, 1/2 cup mini chocolate chips, 1/4 cup ground flaxseed, and a pinch of sea salt (if using). Stir until evenly distributed. The dough should hold its shape when pinched; adjust with more honey or oats if needed.
  3. Optional: Chill the mixture in the refrigerator for 10-15 minutes to make it easier to handle.
  4. Using a cookie scoop or tablespoon, portion the dough and roll into 1-inch balls. If sticky, lightly wet your hands or spray with cooking spray.
